We work that out at the layout stage and form to the pool's actual coping line rather than a simple rectangle, then isolate the finished deck from the pool shell with an expansion joint at the coping, since the shell and the surrounding slab move independently and a pour poured tight against it tends to show up later as a coping stone out of line or a crack running from the pool's edge.
